Process: Harvested by hand at night. Whole cluster pressed to stainless steel tanks for cold setting. Barrreled down for fermentation in 60 gallon French Oak barrels; 80% once used and 20% new using our favorite specially selected strain of Bordelaise Sauvignon Blanc yeast.   Once the primary fermentation was completed the wine rested sur lie for 7 months prior to bottling and was not put through malolactic fermentation to preserve the fresh and focused character of the wine.

Winemaker's Notes:

This 2007 Vintage of our Sauvignon Blanc takes a more refined look at the ‘Musque’ clone.  As our vines mature the intensity of the fruit’s floral-citrus aromas and spicy finish grows. The past four years of working in the vineyard to strengthen the vines above and below the ground has yielded fabulous results.  The canopy has responded, giving us just the right amount of coverage necessary to prevent sunburn and shrivel during the warm Aetna Springs summer and fall.   To keep the wine in balance I looked to moving directly to barrels for fermentation and hand selected a few new barrels from special coopers to increase the mouth feel and balance the spice while protecting the central core of acidity naturally present from this block.  Stirring during the fermentation and sur lie ageing yielded lovely and interesting layers of spiced poached pear and a nice creamy finish I have not seen before from this vineyard.  Still present is the familiar voice of the Sauvignon Blanc from our ranch coming through with rich Meyer lemon, honeysuckle and the exotic aromas of mango and lemongrass. – Jennifer Rue Winemaker
